Summertime Brunswick Stew

Serves 6-8

Melt butter in a cast iron dutch oven. Arrange chicken on bottom.

Layer in vegetables in this order.

Cover tightly and bring to steam. Cook slowly, 1 ½ to 2 hours or until chicken falls from the bones.

You can use rabbit or squirrel instead; and may also add hot pepper, if you like.
