Slice the whole lemons paper thin, rind and all, removing the seeds. Mix well with the sugar and let sit 2 hours or more, preferably blending occasionally.
Prepare enough rich pie crust for a double crust pie.
When ready to make pie, preheat the oven to 450° F. Line a 9" deep dish pie pie with half of the pie crust.Beat eggs until light and frothy. Mix well with the lemon mixture.
Fill the crust with the lemon mixture, arranging the lemon slices evenly. Cover with a second crust and slash several times near the center. Bake at 450° for 15 minutes. Reduce heat to 375° and bake for about 20 minutes or until a silver knife inserted near the edge of the pie comes out clean. Cool before serving.
