Welsh Rarebit

Serves 4-6

Make roux with butter and flour by adding the flour to melted butter; add milk a little at a time, stirring so that it thickens smoothly.

When thickened add cheese, and then flavorings. Heat and once cheese has melted and is completely incorporated, add beer last.

Serve over fresh bread or toasted english muffins.
